I’m often asked for quick, easy recipes that don’t skimp on flavour. Well, here’s one: a recipe for mussels in black bean sauce. My local Chinese take-away does a fabulous version of this but I only order take-away food under extreme (hangover) circumstances so I’ve developed my own recipe over the years.
The key is the black beans, of course. You can buy these from Chinese supermarkets and if you don’t have one nearby you can always order online. I use frozen green lip mussels which are one of my freezer stand-by items but you can use any type of protein with the sauce – squid, prawns, chicken, beef or, if you’re a vegetarian, tofu.
2 tablespoons black beans, rinsed and roughly chopped
2 inch piece of ginger, finely chopped
3 large spring onions, sliced
16 green lip mussels
For the sauce:-
2 tbsps honey
2 tbsps sweet soy sauce
1 tbsp black chinese vinegar
1 tbsp fish sauce
oil for frying
Mix all the sauce ingredients in a jar and give it a good shake. Heat a wok until it smokes and then add a few tablespoons of oil. Quickly throw in the ginger and black beans. Stir fry for 30 seconds and then add the mussels and sauce. Continue to stir fry for about another minute and then serve.
It doesn’t come much quicker, easier or tastier than that!
Serves 4 as part of a larger Chinese meal or as a starter.
