Walnut Bread

IngredientsWalnut Bread

350g strong brown flour

1/2 oz fresh yeast*

2oz toasted chopped walnuts

1/2 tsp salt

8 fl.oz warm water

1/2 tbsp soft dark brown sugar

Beaten egg or milk

Method

Dissolve the yeast in the warm water with the sugar. Add this to the dry ingredients apart from the walnuts and knead for ten minutes. Or do what I do and cheat by using the kneading function on a breadmaker. Add the walnuts and knead well into the mixture and leave to rise in a warm place for 40 mins to an hour. Knock it back, shape however takes your fancy and leave to rise again in a warm place. This should only take 20 mins after which, bake it for 30 mins on gas mark 4 or equivalent.

*Sainsburys sell big blocks of fresh yeast for 99p if you pester them for it at the bakery counter. The blocks are huge and last for months but the good thing is you can break them up and freeze it with no harm whatsoever to its raising properties.
